There are many ways to make tofu. The basic principle is to coagulate protein in soybean milk by adding coagulant. There are many coagulants. Usually we use three kinds in our daily life and market: gypsum, lactone and brine. Tofu brain is mainly made of gypsum or lactone.

Gypsum tofu

Ingredients: 50g cooked gypsum powder, 0/000g dried soybean/kloc-0, 25g raw vegetable oil, 200g soy sauce, lobster sauce 100g, pepper powder 1.5g, cooked pepper 150g, 0.5g monosodium glutamate, and onion1.

Steps:

1. Soak the dried soybeans for about 6 hours, and change the water 2 ~ 3 times. Grinding the soaked soybeans into slurry with a stone mill, filtering the bean dregs, boiling in a pot, and then adding vegetable oil to disperse the foam. In another pot, add 150g water to melt the gypsum powder, then pour the pasted soybean milk into the pot, cover it, and form balls after about 1 hour.

Tip: To use gypsum brine, first pour 1/5- 1/6 soybean milk into gypsum liquid (gypsum is dissolved with a little water), then pour the soybean milk dissolved with gypsum liquid into most other soybean milk and keep the temperature for 20-25 minutes.

2. Mix soy sauce, pepper powder, fermented soybean (pressed into sauce with a knife), cooked pepper, monosodium glutamate, and onion (washed and chopped) in a bowl and put them in each small dish. When eating, put the tofu in a bowl, each person 1 sauce, and dip the tofu into the sauce in the dish to eat.

Second, when mixing soybean milk with brine, stir with a spoon and pour brine in one hand. The speed should be coordinated, the strength should be uniform, and the brine flow rate should be consistent. Until the soybean milk completely forms a gel state, the speed of shaking the spoon should be slowed down and the brine should be stopped. After the tofu is formed, it can be eaten by keeping the temperature for 20-25 minutes.

In the sales process, especially in northern winter, tofu brain containers should be wrapped with quilt cover. The dosage of brine is about 3-4 C per 10 kg of soybean milk, which is equivalent to 7-8 ounces of brine at 28℃.

In addition, the almond bean brain made in some places is not made of soybeans. Its formula is: agar (freeze-dried powder) 0.2 Liang, sugar 4 Liang, water 4 Jin, milk powder 2 Liang, almond essence 20 drops. When making, first soak agar for 2-3 hours, then add water to boil and dissolve, then add milk powder and white sugar, filter, add almond essence and solidify.
