A small amount of dried plums
4 eggplants
A little minced garlic and chopped green onion.
Soy sauce, oyster sauce, cooking wine, sugar, salt
How to make dried plum and eggplant?
Soak a small amount of dried plums in hot water (about a spoonful of dried plums is enough), and don't pour out the soaked water.
Cut the eggplant into hob pieces and mix well with salt for half an hour. The amount of salt is the same as the usual amount of cooking (less oil is absorbed when frying).
Stir-fry minced garlic, squeeze the marinated eggplant out of the water, then stir-fry it in a pot for a while, then stir-fry the soaked dried prunes, and add one tablespoon of cooking wine, two tablespoons of soy sauce, one tablespoon of oyster sauce, and a little sugar and salt (not necessary). At this time, pour the pickled plum vegetables into the water (not too much, just a little) to collect the juice and sprinkle with chopped green onion.
