The method of red bean paste does not necessarily need to add lotus root starch. In some red bean paste, lotus root starch is used to increase the consistency and taste of paste, but not all red bean paste needs to be added with lotus root starch. The basic method of adzuki bean sauce is to cook adzuki bean, add appropriate amount of sugar and stir well. In some practices, other materials, such as Yuanxiao and osmanthus, are added to enhance the flavor. There is no mandatory requirement to add lotus root starch.
