Sauteed pea wedges need to be blanched.
Fried peas need to be blanched, not only to make them safe to eat, but also to maintain a unique taste, and most importantly, to reduce the loss of nutrients.
Don’t blanch the peas for too long. Take them out in about two minutes. If the time is too long, they will easily change color and taste bad. When blanching, add a small amount of salt and oil to keep the peas in a saline solution, thereby slowing down the loss of nutrients in the peas.
