History of tofu in Bagongshan Township
China is the first country to grow soybeans and make tofu products from soybeans. Bagongshan tofu, known as the best in the world, is produced in Bagongshan Township, Shou County today. According to Li Shizhen's Compendium of Materia Medica, a famous medical scientist in the Ming Dynasty, "The method of tofu began with Liu An, the Emperor of the Han Dynasty". According to legend, more than 2,000 years ago, in Shouchun (now Shouxian), the king of Huainan, Liu Andu, talked with eight people, including Su Fei and Zuo Wu, about alchemy in Beishan (now Bagongshan) and accidentally made tofu, which has been passed down to this day. Later, "the method of tofu spread all over the country." The book Xie Chuji said: "The art of tofu has never been heard before and after three generations. It was not until Liu An, king of the Southern Han Dynasty, that it spread to the world. " Zhu Liang, a philosopher in the Southern Song Dynasty, said in "The Poem of Tofu": "Growing peas is exhausting and my heart is bitter. If I had known the art of Huainan, I would have looked for silk cloth. " As the monarch of Huainan in the Western Han Dynasty, Liu An not only invented tofu in Shouchun, but also presided over the compilation of Huainanzi, a masterpiece of "Caging Heaven and Earth, Rich in Ancient and Modern Times". Pearl Spring, Agate Spring and Daquan in Bagongshan Township are the origins of tofu making in China. Bagongshan has been making tofu for more than 2,000 years. The villagers in Bagongshan Township have had the habit of drinking soybean milk made from mountain springs and water mills since ancient times.
