Defatted soybean is bean dregs.

Soybeans are squeezed out of edible oil first, which is also the first value of soybeans, and the rest is bean dregs. The "defatted soybeans" used for brewing soy sauce are bean dregs, just like the "dregs from chewing cane", which was originally used as pig feed by farmers. Now, in order to reduce the cost, soy sauce manufacturers take the "leftovers" back to brew soy sauce.

Relationship transformation and use of defatted soybeans

There are generally two ways to transform the relationship between soybeans and defatted soybeans, namely, mechanical pressing and chemical leaching. Degreased soybeans from mechanical pressing are well preserved except for oil removal. In addition to the dissolution of oil, some trace elements were destroyed and some organic solvents were given to the degreased soybeans obtained by chemical leaching.

Defatted soybean has many uses, which can be used in feed and food industry, such as fermented soy sauce, or made into "soy protein isolate" for meat products, baked goods, flour products, vegetable protein drinks, infant food, sports nutrition and so on.
