Walnut Stir-Fry

Ingredients

300g pancetta, 2 stalks of garlic, 100g parsley, 2 bell peppers, 1 tablespoon each of rice wine and oil, 1 tablespoon each of sugar, 2 tablespoons of soy sauce, 2 tablespoons of walnuts

Methods

Clean the pancetta and cut into 1cm cubes. Pat dry, then cut into 1cm cubes.

Wash the garlic and cut into 5cm pieces with a diagonal knife. Wash the parsley, remove the leaves, and cut into 5cm pieces. Cut the bell peppers in half.

Put the walnuts in a pot of dry roasted flavor, and then take out and chopped, let cool for use.

Heat the oil in a wok over medium heat, and stir-fry the diced pork for about 3 minutes until it is about 50 percent hot.

Season with rice wine, sugar, salt and soy sauce.

Tips

When cooking pancetta, it is important to stir-fry the diced meat thoroughly to force out the fat inside so that the meat tastes fresh and flavorful.

Green garlic and parsley are both very "delicate", put into the pan and stir-fry a few times to get out of the pan, a long time to stir-fry is not good.
