Drawed kiwi fruit is a Hanzhong-style dish. It uses wild kiwi fruit, a specialty of Hanzhong, as the main ingredient and is made using the drawing process. This dish is golden in color, crispy on the outside and tender on the inside.
Ingredients: 400 grams of kiwi fruit (12 pieces);
Ingredients: 50 grams of water starch, 50 grams of dry starch, 2 eggs, 10 grams of flour;
Seasoning: 1000 grams of vegetable oil (actual consumption: 100 grams), 300 grams of sugar.
The preparation method is:
1. Slightly scald the kiwi fruit in boiling water, peel off the skin, dry the starch, and wrap it in a paste made of water starch, flour, and eggs.
2. Place the wok on high heat, add oil and heat until 80% hot. Add kiwi fruits one by one and fry until golden brown. Drain off the oil in a colander. Apply a layer of cooked oil evenly on the plate and place a bowl of hot water on the bottom of the plate.
3. Leave the bottom oil in the pot, add sugar and water and stir until the sugar melts and turns light yellow. When the sugar melts and turns light yellow, pour in the kiwi and turn it upside down to make the sugar liquid stick evenly. Quickly remove from the pot and place on a plate.
