First, brewing yellow rice wine
For Shaoxing people, the special meaning of beginning of winter lies in yellow rice wine. From this day on, yellow rice wine can be brewed. In winter, the temperature is low and the water is clear, which is the most suitable season for wine fermentation. Therefore, Shaoxing people call the most suitable time to make yellow wine from beginning of winter to beginning of spring in the following year "winter brewing" and pray for happiness.
Second, red bean glutinous rice
In Jiangnan water town, there is a custom that the whole family get together on beginning of winter night to eat red beans and glutinous rice. Made of red beans and glutinous rice with sugar, it is soft and sweet, and it is especially popular to cook a pot of steaming glutinous rice in cold winter.
Third, dumplings
A big custom in beginning of winter is "eating dumplings". The dumplings are spherical, which means round and round. They are similar to and larger than the Yuanxiao in the north.
Fourth, green onions
As the folk saying goes, "Eating onions in jiaozi in the north and mutton in copper pot is good for winter". Every time they go to beginning of winter, the older Nanjing people will buy some onions to go home, dip them in sauce or vinegar, or cut them with sesame oil, monosodium glutamate and salt and mix them well, or cut chopped green onions to eat raw.
Five, ginger duck
Ginger Duck originated in Quanzhou, Fujian, and later spread to other parts of China and even overseas. It is a famous traditional snack of Han nationality in Fujian.
Six, sesame oil chicken
Many places in the south have the custom of eating stewed chicken with sesame oil in beginning of winter solar terms, and chicken with sesame oil belongs to Sichuan cuisine.
