Before cooking shark fin, you should prepare some ingredients, such as scallops and ham, as well as some condiments such as onion, ginger, garlic, sugar, starch and salt. Soak the frozen shark's fin in cold water in advance, so that the shark's fin can slowly thaw. Soak the shark's fin in clear water for 30 ~ 48 hours, and change the water every morning and evening.
Cut ham, onion, ginger, garlic and other ingredients for later use, boil water in a hot pot, add shredded ginger after the hot water boils, then put the shark fin in and blanch it again, and take it out in two minutes. Boiling with ginger is mainly for removing fishy smell. Heat the pan, add the clear soup and scallops, then pour the shark's fin and boil it slowly over low heat.
Add seasonings such as sugar, salt, oil, etc. to the pot and stew for 2-3 minutes. Add the shark fin soup in the pot into starch to make a thicken, pour it on the shark fin, and finally sprinkle with shredded ham to finish cooking. It is best not to use other ingredients with strong flavor when cooking shark's fin, otherwise it will easily cover up the delicate flavor of shark's fin.
