After the meat turns white, add soy sauce, cooking wine and sugar, and then add the boiled water that just drowned the ribs. After the fire boils, simmer for about 20 minutes. Braised ribs practice:
Slaughter the ribs into 4 cm pieces, put them in boiling water to remove blood, and then pick them up and wash them for later use. Slice the ginger, wash the onion, remove the head and tie it into a knot (about 3 pieces)
Pour oil into the pan, add sugar at the same time when the oil is still cold (a little more, about one sugar, 2.5 or 3 oils), and stir-fry the sugar slowly over low heat. When the sugar water begins to turn reddish brown and the reddish brown foam begins to appear, immediately pour the ribs into the pot and stir fry, then add ginger slices, pepper and spices, stir fry until fragrant, then pour a little cooking wine and soy sauce for coloring, add clear water, add salt and onion knots, turn the fire to slowly soften the ribs, then pinch off the onions and big spices in the pot and collect the juice on high fire. When the soup thickens, add monosodium glutamate and take the pot.

Ingredients: ribs 1.5 kg or so.
Ingredients: dried peppers, about 20 peppers, a handful of 30-40 ginger, a large piece of garlic, 6,7 onions, 1 to 1 salt, and a small amount of monosodium glutamate.
Exercise:
1, blanch the ribs first, and pick them up.
2. Add a little oil after the pot is hot, wait a moment, add dried pepper, pepper, ginger, garlic and sugar, stir-fry for about 2 minutes, then add ribs and green onions and continue to stir-fry. You can also add a little rice wine (personally, you can also add white wine).
3. Wait until the ribs change color (about 2 minutes), add boiling water, the water just doesn't pass the ribs or is a little less, and boil over high fire. After the water is boiled, simmer it until it is cooked (it took me 40 minutes).
4, add the right amount of monosodium glutamate, stir fry, turn off the fire, and then simmer for 5 minutes.
Grilled ribs are the best way to make sweet and sour pork chops.
When you buy it, ask the butcher to chop the ribs into small pieces of about 2 cm (the knife at home is too blunt to chop well).

This dish is golden in color, sweet and sour. It's an appetizer and can be eaten as a cold dish.
Contrary to several people upstairs, when I cooked this dish, I didn't blanch the small rows, but directly fried them in a small oil pan until they were golden and cooked. Stir-fry the pulp until the juice dries.
Fried Spare Ribs with Spiced Salt
Ingredients: a catty and a half of pork chops bought in the supermarket, three green peppers, one red pepper and a few garlic.
Exercise:
Marinate the ribs with salt, corn flour, chicken powder, a little sugar and soy sauce for half an hour, and chop the peppers and garlic for later use.
Heat the oil in the pan and fry the marinated ribs until they are cooked.
Stir-fry chopped pepper and garlic, add salt, pepper and a little chicken powder, and fry as dry as possible.
It is best to pour in the fried ribs and stir them for a few times before serving.
