Jiang Shui is a traditional dish.
Slurry is made from mustard greens, cabbage, celery, koji, radish leaves, soybean sprouts, etc., which are blanched in boiling water, mixed with a small amount of flour, added with warm water, and fermented with yeast. Among them, rape pulp water and celery pulp water are top grade. In southern Shaanxi, there is a vegetable that specializes in making pulp, mustard pulp and water vegetables.
The slurry is light white and slightly acidic. If you scoop it out and drink it directly, if you add a little sugar, it will be sweet and sour. It is rich in nutrients and can relieve summer heat and quench thirst. If you simmer the squid with chili peppers and green onions in oil, and then add ramen or handmade noodles, it will become a bowl of authentic squid noodles.
The legend of Jiangshui:
In Tianshui, there are many legends related to Jiangshui. The most widely spread is an incident when Zhuge Liang left Qishan on the sixth day. The story goes that Zhuge Liang led the Shu Han army on a long journey to Tianshui, but due to the severe dryness and heat in Longshang, many soldiers had diarrhea and vomiting. In desperation, someone suggested that these heatstroke soldiers drink some local soup called pulp water.
As a result, the sergeants who suffered from heat stroke recovered quickly after three or two days. Seeing this scene, Zhuge Liang asked the Shu Han soldiers to pile up the soil from their hometown that they brought with them when they went out, and let them fight with Cao Wei's army. This is the origin of Zhuge Military Base, one of the eight scenic spots in Tianshui.
“Always add water after meals, and when the spring is gone, make pulp.” This is a poem written by a modern poet describing the pulp. Two folk jingles say it better: "Three pounds of chili peppers and ten pounds of salt can last for half a year in a tank of syrup."
In the past when material life was extremely poor, sauerkraut was not only a condiment in the daily diet, but more importantly, it was also responsible for storing vegetables and satisfying hunger. In the past years, the shadow of hunger has long shrouded the land of Tianshui. At that time, fortunately there were water tanks and wild vegetables all over the mountains and rivers, so many ancestors could wait for another wheat season.
