Step by Steps of Stir-Frying Eggplant with Tomatoes

Prepare the above ingredients.

Cut the eggplant into pieces and then make a few cuts on it for flavor.

Dice the tomatoes small.

Minute the onion, ginger and garlic.

Heat the oil in a pan and add the hairy peppers and pop them.

Pour in the eggplant and stir-fry until softened.

Reserve oil in the pan, add green onion, ginger and garlic and sauté the tomatoes until red oil comes out.

Then pour in the eggplant and stir-fry until the eggplant is coated with tomato sauce, sprinkle with chopped green onion and remove from the pan.
