Introduction
Baking fish fillets wrapped in aluminum foil is not only easy and convenient, but also does not lose any nutrients dissolved in water.
Ingredients
280 grams of leafy greens, such as Chinese cabbage or kale (cabbage), chopped, 4 skinless salmon (salmon) or cod fillets, about 140 grams each, 1/2 orange juice, 1/2 orange zest, grated, 3 tablespoons of finely chopped fresh basil leaves, 2 cloves of garlic, finely chopped, 120 milliliters of dry white wine, 1 tablespoon of olive oil, medium-sized fennel bulb 1/2, thinly sliced, 1 carrot, julienned, Herbed Bugle Muesli:, 1 cup of Bugle Muesli, 720 ml of water, 1 tablespoon of olive oil, 1/2 lemon, squeezed, 1 clove of garlic, minced, 2 tablespoons of chopped fresh basil leaves, 2 tablespoons of chopped fresh coriander (cilantro), 3 green onions, chopped, a pinch of salt and pepper
How to do it
1. Preheat the oven to 475 degrees Fahrenheit (about 245 degrees Celsius). Prepare 4 30 x 30 cm sheets of aluminum foil or baking paper. Divide the leafy vegetables into 4 equal portions and lay them flat in the center of each sheet of foil. Add the fish fillets, pour the orange juice over them, sprinkle with the basil, orange zest, garlic, white wine, olive oil, fennel, and carrots, and season with salt and pepper. Roll up the aluminum foil and wrap the fillets loosely, folding the sides to leave some air inside so that the ingredients steam easily. Place the wrapped fillets on a baking sheet and set aside.
2. Pour the bulgur and 3 cups water into a large saucepan. Bring to a boil, then reduce the heat slightly and cook, covered, for 12 to 15 minutes or until the bulgur is slightly softened. Drain off excess water.
3. While the bulgur muesli is cooking, place the wrapped fillets in the oven and bake for 10 minutes, then open one of the foil pouches and check to see if the fish is cooked through - cooked fillets fall apart easily.
4. Fluff the cooked bulgur with a fork, then toss with the olive oil, lemon juice, garlic, basil, parsley, and scallions. Season with salt and pepper. Serve each person with a piece of paper-wrapped fish (opened only when it's time to eat) and a bowl of Bugle Wheat.
