2. Crush the dried grapes with a pulverizer.
3. Add 2% white sugar to the grape liquid, stir and cover it, and put it in a warm place of 35-50℃ for fermentation.
4. After two days, the grape skin has turned brown and floated on it. At this time, open the lid and smell it. If there is a fragrant wine, you can filter the wine residue with gauze, then add 10% white wine and 10% white sugar, stir and ferment. At this time, the hip flask should be placed in a cool place.
5. After one month, the wine is ripe, the color is orange or rose, the wine is rich and mellow, and the taste is a little sour. At this time, filter it once (with multiple layers of gauze) before putting it into the bottle for later use.
note:
(1) Glass bottles should be used in the first fermentation period (2-3 days).
(2) Use a small plastic pot for the second fermentation period (don't open the bottle cap at any time)
My wine making method
1. Wash and dry ripe fresh grapes, crush them, put them into a wide-mouth container, seal them and ferment them at room temperature. In the process of packaging operation should pay attention to two points:
1. Do not be contaminated with oil when crushing raw materials and packaging.
2. The sealing should not be too tight, and there should be a gap for the removal of fermentation gas during fermentation.
2. The fermentation time at normal temperature is generally 3-5 days. The fermented raw materials are in solid-liquid separation state. The liquid is translucent, and the solid is suspended and light brown.
3. After the fermentation is mature, the original juice can be extracted, and the method of diversion or filtration can be adopted when extracting the original juice.
4. The raw juice should be stored in a backlit, cool and ventilated place after being packed into cakes. The wine will be ripe for drinking after January.
5. The wine brewed with grape skins is dry red wine, and the wine liquid is red. The color of wine is related to the color of grapes. The redder the grapes, the stronger the wine color. Dry white wine is made from peeled grapes, and the color of the wine is light golden yellow.
