ingredients

8g oxtail, onion (it is better to use onion, but I didn't use it at home), 5 slices of ginger, half onion, 1 tbsp of cooking wine, 1 teaspoon of soy sauce (5ml), 3g of rock sugar, a pinch of salt, one fragrant leaf and one star anise

Method

1. After the oxtail is soaked with flowing water to clean the blood, enlarge the pot, inject clean water that has not passed the oxtail, open the lid and cook over high fire.

2. after boiling, keep it on medium heat, keep it uncovered all the time, and turn off the heat after boiling for three minutes. In this process, the dirt and smell in the oxtail will be boiled out, and we can see that there is really a lot of dirt in the oxtail.

3. Take out the oxtail and rinse it with warm water.

4. Take the pressure cooker, pour the oxtail into it, inject 6ml of clean water, add cooking wine, ginger slices, onion segments, fragrant leaves and star anise.

5. Cover it, boil it on high fire until the pressure cooker is aerated, then turn down the heat for 3 minutes, then take out the oxtail and keep the soup. (This new PN pressure cooker in my house has been too crisp for the oxtail to form after 35 minutes.)

6. Stir-fry the sugar color: take a wok, add a teaspoon of cooking oil, add the broken rock sugar and boil it on low heat.

7. Be patient in this step, and cook slowly until the rock sugar melts and cokes to amber.

8. pour in oxtail and turn to medium heat, stir-fry until oxtail is completely covered with sugar.

12. Stew over medium heat until the soup thickens. Sprinkle a handful of chopped parsley if you like. Personally, I like nothing, just out of the pot, original flavor.

Tips

1. Oxtail must be washed with running water before blanching. In the blanching process, open the lid and cook, so as to remove blood stains and remove some fishy smell.

2. The cooking time of the pressure cooker is adjusted according to the situation of our own pressure cooker. It takes nearly 4 minutes for my old pressure cooker to stew oxtail, but this new pressure cooker only takes 3 minutes. This time, I stewed it for 35 minutes, which was obviously too crisp to cook in a wok.

3. It takes patience to stir-fry sugar. Beginners should remember to simmer slowly with minimum fire. When the rock sugar begins to melt and change color, be sure to observe not to overdo it. The sugar that has passed through will be bitter.
