The origin of the dish of dogbao pickles
Dogbao pickles originated in Korea and are made from the root of a wild herb called orris. Since burdock was not available in Tohoku during the Japanese Occupation, the Japanese called it "gobou" (pronounced "gobou" in Japanese), which is a similar taste and shape to the root of the eustoma instead of burdock.
The name "gobou pickles" is derived from this name, and the Korean people call "gobou pickles" "kaburagi". Because burdock root has a foul odor, the Koreans used the eustoma instead of burdock root to make the pickle.
