Ingredients: 500 grams of steamed squid, 200 grams of crispy rice, 25 grams of steamed mushrooms, 25 grams of winter bamboo shoots, 25 grams of ham slices, 750 grams of thick soup, 1000 grams of peanut oil, about 150 grams of oyster sauce, Onions, ginger, garlic, pickled chilies, salt, soy sauce, sugar, pepper, vinegar, monosodium glutamate, and a little water starch.
Preparation method: 1. Change the squid into domino blocks 3 cm wide and 5 cm long (and cut them into half-centimeter thick slices), and break the crispy rice into irregular pieces (not too big, not too small) , cut the mushrooms into pieces, slice the winter bamboo shoots, cut the green onions into horse-ear shapes, cut the ginger into eye-shaped slices, cut the garlic into slices, remove the seeds from the soaked peppers and cut them into diagonal pieces.
2. Put the squid slices into the soup pot, add boiling water and soda ash, cover and simmer for about 20 minutes. Decant out the sewage, then add boiling water, cover and simmer for another 10 minutes, then remove the sewage. Add boiling water to soak and set aside.
3. First put the mushrooms and bamboo shoot slices into the water pot and boil them for a while and then pick them up. Then heat the pot, add lard, add onion, ginger and garlic and cook until golden brown, add cooking wine and thick soup, boil for a while, remove the onion, ginger and garlic, then add ham slices, mushroom slices and bamboo shoots slices, soaked chili peppers, salt, seasoning powder, soy sauce, sugar, pepper noodles and drained squid. When the soup is boiling, thicken it with starch, add balsamic vinegar, bring to the pot, and put it into a large bowl.
4. While making squid soup, put in a separate oil pan, add 1000 grams of peanut oil, when the oil is about 80-90% hot, put the crispy rice into the pan, fry until it turns yellow, then remove it and put it into the soup basin. Put it inside, pour a little boiling oil on it, and serve it at the same time as the hot squid soup. Pour the soup immediately on the rice crust and eat.
