Let me talk about my experience in making soup.
1. Prepare a piece of ginger, cut it into large pieces, wash the ribs, then put it in a pot to boil, remove some unclean substances, take out the ribs and ginger, pour out the water, add oil and stir-fry the ginger and ribs together, and add some favorite ingredients such as star anise.
Don't let the lotus root idle when frying ribs. Wash the lotus root, cut it into oblique pieces, and put it in a soup cooker. If there is no special cooking vessel, you can use other convenient vessels instead. Add water and seasonings, such as some lotus seed rice and some spices. Crispy or powdered lotus roots should be distinguished when buying, and cannot be seasoned with salt.
3. Cook the fried and discolored ribs in the lotus root. Just simmer for a while after the water boils.
4. Add salt to taste before stewing, that is, add salt to taste after boiling for the first time. Then simmer.
Sprinkle chopped green onion on lotus root soup when dressing up.
