8 slices, brown bread
1 onion, chopped

1 curry leaf
1 teaspoon mustard seeds

1 teaspoon soy sauce
1 teaspoon tomato paste
Salt
1 teaspoon lemon juice
1 tablespoon chopped coriander leaves

Method:
Heat oil in a large frying pan and add mustard seeds, urad dal and curry leaves. Heat for a minute and add onions and peppers. Stir-fry for 1-2 minutes or until cooked through. Add chopped tomatoes, red chilli powder, green chilli, turmeric powder, salt, soy sauce and tomato paste. Cook until oil separates from mixture. Now take a piece of bread, sprinkle some water on it and crush it with your hands to break it into small pieces. Repeat this step with all slices and add them to the mixture. Stir well until the mixture is evenly coated on the bread. Cover the pot and cook over low heat for 2 minutes. Garnish with lemon juice and coriander leaves and serve.
2. Oatmeal and Spinach Pancakes
Not everyone likes oats or spinach. But stir it into pancakes and it becomes your breakfast.
Ingredients:
1 cup oat flour
1/2 cup spinach, chopped
Onion, chopped
1-2 green peppers, chopped
? tsp ginger powder
? tsp red chili powder
? tsp turmeric powder
1 teaspoon cumin seeds
?tspAsafoetida

4-5 teaspoons vegetable oil
Method:
In a large bowl, add all ingredients except vegetable oil. Add water and mix all ingredients well to make a smooth batter. Let sit for 10 minutes. Now brush some oil in the frying pan and pour a ladle of batter. Once bubbles start to form on the pancake and it's cooked through, flip the pancake over and cook the other side. Repeat with remaining batter and enjoy.

Transfer it to a plate, add the chopped carrots and peppers to the pan and cook for 2-3 minutes, or until the vegetables are cooked through. Now add chopped spinach, soy sauce and tomato paste and cook for another 2-3 minutes. Add chicken pieces and mix well. Transfer it to a plate and in the same pan, add the beaten eggs to make an omelette. Once the omelette is done, add the chicken and vegetable filling to one side of the omelette.
