Fresh sour papaya is sliced and dried
Prepare high-count white wine, and I use 56-degree barrel-loaded Niulanshan Erguotou. Put the dried papaya into the white wine, airtight collection after about 1 month, take out the papaya residue, to get clear papaya wine
clarify the wine, put the rock sugar. Shake the bottle after a day or two to let the rock sugar completely melt into the wine.
All done. The picture shows the papaya wine still steeping, without the rock sugar yet.
