Chicken wings moderate amount

Mirin mirin 2 tbsp (30ml), can be replaced by honey water

Boil the chicken wings and remove the excess fat from the wings through the boiling step. Lay the cooked chicken wings flat on a baking sheet. Here it is better to place the wings on a grill rack or this kind of uneven silicone mat, so that the fat in the wings will accumulate in the grooves after grilling, which on one hand will keep the wings less oily, and on the other hand the outer skin of the wings will be more crispy.
Heat the oven to 350°F (180°C) and bake for 15 minutes or until the wings crackle and the fat is coming out, then remove the wings and turn them over, or continue to bake them for a while longer. Turn them over and grill them again until they crackle.
Combine the sugar, soy sauce and honey in a saucepan over medium heat until the sugar melts. Remove the grilled wings from the oven and coat them evenly with the sauce.
