Cherry foie gras, is a dish. It is foie gras that is also made into a ball, covered with cherry gel, and mixed with real cherries, so that at a cursory glance it is almost impossible to tell which is foie gras and which is cherry. The foie gras is unctuous with the cherries, and that's a good match. It's a dish that stands up to other Michelin classics.
