Note: Tiramisu needs mascarpone cheese, but it is difficult to buy mascarpone. If there is no mascarpone, cream cheese can be used as a substitute. Put the egg yolk and 60 grams of fine sugar in a bowl. Boil hot water in the pot, put the bowl with egg yolk in the pot, heat and turn off the water (don't boil), and keep stirring until the fine sugar dissolves and the egg yolk turns white. Beat 120ML whipped cream to 70%, not too hard. Beat mascarpone cheese with a blender until it is loose, mix it with egg yolk in 8 and light cream in 9, and stir evenly to make cheese stuffing.

Cooking tips
