The main ways to cook enoki mushrooms include barbecue, hot pot, stir-fry, and stew. As a common edible fungus, enoki mushrooms can be made into many kinds of delicacies.
Now I will share with you two delicacies made with enoki mushrooms, enoki mushroom fat beef and enoki mushroom hoof and foot soup. First of all, these two dishes are very suitable for pregnant women and often appear on the confinement meal menu. There are differences between the dishes in confinement meals and the ordinary ones, mainly less oil and less salt.
Ingredients for enoki mushroom fat beef preparation: beef ribs, enoki mushrooms, fat beef, onions, ginger, celery, carrots, apples, salt, green and red pepper shreds, French spices, and cooking wine.
Preparation method: 1. Wash all vegetables and fruits, cut green onions into sections, slice ginger, cut celery into sections, cut carrots into sections, core and cut apples into pieces, and cut green and red peppers into shreds. 2. Wash the beef ribs and bake them directly in the oven at 270 degrees for 40-60 minutes. Take them out when the surface is golden and fragrant. 3. Crush the beef bone and put it into the soup bucket, then put the vegetables and fruits you just cut into the soup bucket (don’t put shredded green and red peppers, this is for decoration). 4. Bring to a boil over high heat, then simmer over low heat for 3-4 hours. Use high heat to simmer the beef bone soup until it becomes milky white. Filter out the residue and keep the soup. 5. Wash and remove the roots of the enoki mushrooms, soften the fat beef, roll the softened beef on the enoki mushrooms, and insert toothpicks to secure. 6. Boil water in the pot, add rolled beef enoki mushrooms, add some green onion and ginger cooking wine to remove the fishy smell, cook until cooked, take out and place on a plate (remove toothpicks). 7. Pour a little beef bone soup into the pot, bring it to a boil and add some salt. Pour the beef bone soup into a plate with fat beef and enoki mushrooms. Place green and red pepper shreds and French incense on top to decorate. Tips: The final product of this dish is almost oil-free and only adds a little salt. It can be said to be very healthy and very suitable for pregnant women. In addition, confinement period is about four weeks, and this dish can only be eaten in the third week.
Ingredients for enoki mushroom and pig trotter soup: pig trotters, enoki mushrooms, red dates, cordyceps flowers, wolfberry, salt, corn, green onions, ginger slices, cooking wine and salt.
Preparation method: 1. Wash and remove the hair from the pig's trotters, chop into pieces, add green onions, cooking wine, ginger slices to the pot in cold water, and blanch them to remove the fishy smell (it is recommended to blanch the pig's trotters because of the strong fishy smell) 2-3 times, you don’t need to add onions, ginger, etc. for the subsequent blanching). 2. Wash the corn and cut it into pieces, put it in a casserole, add red dates, cordyceps flowers, wolfberry, then add the blanched pig's trotters, and simmer on low heat for 2-3 hours. 3. Flammulina enoki mushrooms will not rot when cooked for a long time, so they are very suitable for making soup. Be sure to boil the pig's trotters until they are soft and tender and remove the bones. After cooking, add a little salt to taste, and the delicious and milky enoki mushroom and pig's trotters soup is ready.
Tips: You can use a fire to burn off the outer hair of pig's trotters until they are burnt brown. Then soak them in warm water and use a brush to clean the browned parts. The pig hair in the gap can be cut off together with the fur to avoid affecting appetite.
