Fat beef is made of beef.
Fat beef is a type of beef sliced from a cow, thinly sliced, fat and lean after the acid-expelling process, to make it easier to shabu-shabu in a hot pot. One thing to note is that slices of fatty beef are generally fat and lean, but this is often not the case naturally, but rather an acquired form of meat slices obtained by layering up pure lean and pure fat meat from the cow, compacting and freezing it.
Fat beef is from fed, painless slaughter, advanced acid-removal process, usually selecting high-quality waist and back of the longest back muscle and abdominal boneless muscle trimmed and shaped, and now all parts of the meat are made into different names of fat beef billet sent to restaurants. And then through the special machinery planing into thin slices, it becomes our usual shabu-shabu eaten by the fat beef.
Categorization of fatty beef
1. Eye fat beef. This is the finest of all fatty beef, made from the middle part of the spine of a top-grade cow, and is called "eye meat" because it is fat and thin, and is shaped like an eye, and is characterized by a delicate and silky texture when eaten in shabu-shabu.
2. Brain beef. The upper part of the spine, close to the head, is called the upper brain, and is characterized by fat deposits in the meat that resemble marble spots, making it a good product for shabu-shabu.
3. Spine beef. The fat is deposited on one side of the meat, and the red and white color is beautiful and unusual. It can be eaten raw or in shabu-shabu style, and can be divided into Grade 5, Grade A, and Grade F.
4. Beer beef. The so-called beer beef is made from the back of the spine and the abdomen of a common fat cow, which is processed and shaped into a fat cow, and is characterized by good taste, tenderness, and cheapness, so it is called beer beef because of the use of beer as a feed for fattening the cow.
