Stir-fried mutton with onion, loose sheet (i.e. fried belly), elegant as honey, stewed mutton (with yellow sauce for Hui people), braised oxtail, fried Hu (i.e. fried mutton with onion), mutton head with sauce, mutton head meat and miscellaneous sheep.
Real cooking should be very light, but it is rarely done now. Originally only Han people had intestines, but now Hui people have them. Cooked food without sauce used to be white, but now it is colored.
