Prepared materials: high gluten flour? 400g, water? 280g, yeast? 3.5g, salt 4g
Steps
Mix gluten flour, water, yeast 3, salt and stir until there is no dry powder, let rise for about 40 minutes.
Dip in water and fold 4 times from top to bottom, left to right, then bottom to top, right to left.
3. Let rise for about 1 1/2 hours, until the dough is about 2 times its size. 4. Fold the dough over 4 more times and invert it onto a floured surface, the inside of the dough is honeycombed, so the dough is in good shape. 5. Press the dough with your hand to make it pop up, it's ready to ferment. Sprinkle flour, gently roll it up, and roll it into a long strip 6. Spray with water, sprinkle with flour, and cut the mouth, about 10 centimeters long and diagonal. 7. Preheat the oven to 250 degrees, spray the walls with water to form steam. 8. Bake for 30 minutes out of the oven, cool and serve
