1. Wash beans, star anise and pepper, and air-dry them outdoors for about 30 minutes;
2. Cut the washed beans into even small particles, and if you are in a bad mood, you will mess with the knife, hee hee.
3. Add salt to chopped peppers, star anise and chopped beans and stir well;
4. Put the stirred beans into a clean glass bottle;
5. After installation, gently press it with a spoon for a few times.
It is advisable not to crush the beans;
6. Prepare a fresh-keeping bag, fold it in half and stuff it above the beans in the bottle;
7. After pressing, turn the bottle over so that the beans don't fall out.
8. Prepare a sealed bag, and inject a small amount of water, which has just flooded the lid of the bottle;
9. Pour the bottle full of beans into a sealed bag with water for one week, and put it for two more days if it is not sour enough;
10. Put the pot on the fire, pour in the right amount of oil, pour in the chopped sour beans and stir-fry for a few minutes before serving.
Tips
The lid of the bottle should be tightened, or it will go bad if it is watered.
