① The salted fish after salting and drying is very salty, so the first step is to cut the salted fish into suitable pieces and then soak it in cold water for one hour.
(2) After the salted fish is soaked, there will be a lot of mucus and unclean impurities on its surface, so we should rinse it with clean water until the surface washing of the salted fish is clean.
(3) After the salted fish is cleaned, we put it in a filter basin to drain the water on the surface of the salted fish, which is convenient for us to fry in the next step. If there is too much water on the surface of the salted fish, oil will spill during frying, so it is also a very important step to drain the water on the surface of the salted fish.
(4) Add an appropriate amount of cooking oil into the pot, and when the oil temperature is heated to 50%, put the salted fish pieces drained of water into the pot for frying. Because there is not much water in the salted fish, the frying time does not need to be too long. Just fry the salted fish until the surface is golden and crisp, and then remove and drain the oil.

Steamed salted fish
Ingredients used: a salted fish, 30g of onion and ginger, appropriate amount of Chili powder and cumin, and 30g of edible oil.
Practice:
(1) Cut the salted fish into two sections, soak it in clear water for one hour, then clean the soaked salted fish with clear water, and put it in a filter basin to drain the water for later use.
(2) Chop the onion and ginger, prepare a steamer, put the cleaned salted fish on the steamer, first brush a layer of edible oil on the surface of the salted fish, then sprinkle onion and ginger, sprinkle pepper noodles and cumin granules, boil the steamer with high fire, and steam for 15 minutes to ripen.
