Mutton soup was originally a hot soup made of mutton. Mutton soup originated in China and was introduced to Japan, becoming a traditional snack in Japan. In the early days, mutton soup was a soup in which mutton was added and then cooled to a frozen state. Later, mutton soup was introduced to Japan, but from Kamakura to Muromachi, Zen was introduced. Because monks are forbidden to eat meat, mutton soup gradually evolved into a jelly-like food made of beans. Since then, mutton soup has become one of the famous teas in the tea ceremony.
Types of mutton soup:
1. Benlian: Traditional original mutton soup, boiled with slow fire for three to four hours, has a sweet taste and is suitable for matching with bitter tea.
2. Kokura: a popular taste made of red beans.
3. Chestnut: made of chestnut as the main material.
4. Brown sugar: It tastes sweet and is made of brown sugar.
5. Matcha: mutton soup with green tea flavor.
6. Yamaha: It tastes sweet and the color is mostly purple.
