1. Remove the shells and threads from the prawns, leave the tail, wash with water and drain.
2. Prepare a bowl of egg white, add salt and cornstarch, mix well and then pour the shrimp into the mix.
3. Heat the oil in a hot pan and stir-fry the shrimp until they turn brown, then remove from the pan and set aside.
4. Add garlic, red chili and green onions and sauté until fragrant.
5. Pour the shrimp back into the pan, season with salt and sugar, and stir-fry well.
