material
Sheep scorpion lamb chop 1000g, half onion, one ginger, four onion segments, three garlic cloves, a handful of coriander and a proper amount of sesame oil.
A: Vegetable oil, salt, soy sauce, soy sauce, cooking wine and rock sugar.
B: Fennel, anise, nutmeg, cardamom, fragrant leaves, rock sugar, cinnamon, broth, clove, pepper and pepper.
working methods
1. Chop scorpions and lamb chops into 4cm pieces, soak them in cold water for two hours, and soak the blood out.
2. Shred the onion, cut the onion into sections, slice the ginger, peel the garlic and pat it evenly for use.
3. Add cold water to the pot, pour the soaked scorpion and lamb chops into the pot, add onion, ginger slices, pepper and a star anise, pour a proper amount of cooking wine, boil with strong fire, skim off the floating foam, and take out the scorpion and lamb chops for later use.
4. Pour a little oil in another pot. When the oil temperature is 40% hot, add shredded onion and coriander, stir-fry until fragrant, stir-fry shredded onion and coriander oil, and take them out for later use.
5. Add seasoning B and fry until the oil is less than 50% hot.
6. Then pour the scorpion and lamb chops into the pot and stir fry for a while.
7. Pour into the soup pot, add some hot water and broth, pour in onion and coriander, add a proper amount of seasoning A, boil over high fire, and simmer for about an hour and a half.
8. Then add salt and pepper, a little coriander and a little sesame oil to serve.
