You can prepare fresh radish and appropriate amount of salt, and also prepare some Chili powder, peppercorns, fennel powder, salt and other seasonings, and then prepare an appropriate amount of white sugar and some high-grade pure grain white wine.
Steps for pickling whole radish
1. Wash the prepared fresh radish with clean water, then put more water in the pot and boil it. Put the radishes into the water and take them out quickly after the radish skins wrinkle.
2. Sun-dry the blanched radish in the sun. Do not dry it too much until the radish becomes soft. It takes about two or three days to get this level of exposure.
3. Put the prepared chili powder, Sichuan pepper powder, fennel powder and salt together and mix thoroughly, then add an appropriate amount of high-strength white wine, mix these seasonings thoroughly and set aside.
4. Take out the dried radishes and apply the seasoning evenly on each radish. After spreading evenly, put the seasoned radishes in a jar for pickling and place them properly. After that, put a heavy object on top and seal the jar. After two weeks, the radish in the jar will be flavored. When eating, just take it out and wash off the seasoning on the surface.
