If you buy frozen shrimp, then
1. Remove the shrimp head first.
2. Peel off the shrimp shell and remove the shrimp tail.
3. Shrimp has a black line from beginning to end, which is shrimp sausage. You can pick it off with a toothpick, or you can pick off the shrimp line with pointed chopsticks.
4. After picking, rinse with clear water.
