How to Make Oven Rice Cake
Coat the inside of the mold with butter using a brush and set aside.
Place the coconut in the oven and lightly air-bake until colored, about 5 minutes; set aside.
Beat the eggs, add the granulated sugar, and stir until the sugar dissolves;
Add the glutinous rice flour and mix until it is semi-dry and powdery, then pour in 150g of the milk, and mix until smooth and grain-free;
Pour in the remaining 300g of milk, and whisk until well blended;
Finally, add the vanilla extract and salt, and whisk until well blended;
Pour the batter into the baking pan, and place it in the oven
Take out the baking tray, sprinkle the coconut on the surface, then sprinkle a moderate amount of chopped dates, and use a spoon to gently press into the batter (in order to avoid the dates from baking too dry and affecting the texture);
Send it into the oven again, and bake it at 180 degrees for 25-30 minutes, and the surface will be ready;
Remove it out, and leave it to cool down a little bit before serving.
