Ingredients: half each chicken, onion, and carrot.
Seasoning: two dried onions (chopped), one teaspoon of starch, two tablespoons each of salad oil, rice vinegar, light soy sauce, and dark soy sauce, one tablespoon of Shaoxing wine, three tablespoons of white sugar, and five tablespoons of water.
Method: ① Wash the chicken and cut it into pieces, add a teaspoon of starch and mix well, soak in oil and remove, drain the oil and set aside.
②Peel the carrots and cut them into thick slices along with the onions and set aside.
③Put two tablespoons of salad oil in the vessel, sauté the dried onions and chicken until fragrant, add the carrots and onions and stir-fry evenly, add one tablespoon of Shaoxing wine, three tablespoons of sugar, five tablespoons of water and light soy sauce. Add two tablespoons each of dark soy sauce and rice vinegar, cook over medium heat for 40 minutes, until the sauce dries up and the chicken is cooked.
