Vegetarian gazpacho

Vegetarian gazpacho is a combination of various vegetables, such as peanuts, seaweed, cauliflower, peperoncini, dried tofu, garlic and so on, stirred together, put some salt, sesame oil, sugar, chili oil, soy sauce and so on, it tastes cold, but very flavorful. Although the vegetarian gazpacho is cold, every vegetarian dish is blanched with boiling water. I also like to do this, because of the simple method, today I do the garlic and dry shredded gazpacho.

Main ingredient: 200 grams of garlic leaves, 200 grams of dried silk

Methods/Steps

Garlic, remove the roots and rotten leaves, and then wash. Garlic is especially tasty after winter frost, tender and sweet, and sterilized.

Use the head of a kitchen knife to make a few vertical cuts along the roots of the garlic, so that the garlic becomes silky and can be easily scalded in boiling water later.

Wash 200 grams of dried julienne in water, then scald it in boiling water. At first, the dried silk is a little yellowish, and after blanching, it becomes white.

Put water in an iron pot and bring to a boil, then put the garlic leaves in the boiling water until soft. Note: Don't scald them too badly and brown them.

Scald the garlic leaves with a colander, then put them in cold air to cool naturally; then squeeze out a little water.

Don't pour away the remaining boiling water, pour the dried shreds into it and continue to scald and boil for a while, then strain out and put into a pot. Note: For sanitary purposes, boil until the water boils.

Slice the scalded garlic leaves into segments, put them together with the dried shreds, put the right amount of salt and sugar, and start mixing well.

Mixed more and more evenly, the color is more beautiful.

Packed into a larger plate when the noodles, and then drizzled with a bit of sesame oil, a pot of sweet and salty vegetarian collage gazpacho is ready, fresh, crisp.
