Recipe for stewed turtle soup:
Ingredients: soft-shell turtle, quail eggs, ginger, wolfberry, angelica, salt, chicken essence.
Step 1. When buying the turtle, ask the store to help kill it. Do not cut off the turtle shell, keep it intact. Take it home and clean it for later use.
Step 2, appropriate amount of quail eggs (you can buy ready-shelled ones or raw ones, just cook them at home and peel off the shells), peel and wash the ginger, slice it, Angelica sinensis and Rinse the wolfberries.
Step 3. Put half a pot of water into the pot and bring to a boil. Pour the cleaned turtle into the pot and blanch it for 2 minutes, so that every piece of turtle can be soaked in the hot water.
Step 4: Blanch the turtle, take it out of the water, and tear off the outer membrane. There is a membrane on the entire turtle, including the skin, and all of it must be cleaned.
Step 5. After cleaning the soft-shell turtle, clean it, put it into a large bowl, add ginger slices and angelica root, and then add an appropriate amount of water.
Step 6. Put an appropriate amount of water in the steamer and bring to a boil, put on the steaming rack, put the soft-shell turtle on the steaming rack, cover the lid, steam over high heat for 5 minutes and then simmer over medium heat for 30 minutes.
Step 7. After simmering, add the quail eggs, then add an appropriate amount of salt, and continue to simmer for another 15 minutes.
Step 8. After stewing, add wolfberry, add appropriate amount of chicken essence and mix thoroughly, then take it out of the pot.
