1. Ingredients: 300g milk, 3 eggs, 5 drops vanilla essence, 30g sugar, 25g cold water, 25g hot water.
2. Pour in the milk and sugar, heat over low heat to melt the sugar, and add the vanilla essence.
3. Beat the eggs, pour in the milk and stir.
4. Sieve twice to remove broken ribs, impurities and bubbles.
5. Pour the sugar into the pot, add cold water, and shake the pot to heat the sugar evenly.
6. When the color becomes darker, remove from the fire, add hot water and bring to boil.
7. Take the mold and pour a layer of caramel, then pour the pudding liquid and cover it.
8. Put it in the oven, put hot water in the plate, heat up and down at 160℃, and bake for 40 minutes.
9. Take it out, let it cool and then refrigerate it for more than 2 hours. Use a knife to make a circle along the wall of the bowl and flip it out on a plate.
