Do you have a favorite bowl of noodles? Today I’m sharing two kinds of noodles that you can make at home
1. Oil noodles
Ingredients: 200g ordinary flour (medium gluten), 105g water, 2g salt, 15g minced garlic, chopped green onion 10g, 8g chili noodles, and Sichuan pepper powder according to taste
3g salt, 30g cooking oil, 5g balsamic vinegar, 3g light soy sauce
Preparation step 1

Divide the dough into four parts, roll each part into an oval, and apply oil. Cover with plastic wrap and let rest for more than 40 minutes.

Roll out the dough and make a groove in the middle. Carefully stretch the dough piece with your hands and separate it from the middle.
Because it presses through the grooves, the dough pieces can be separated easily. If the pulled noodles are not put into the pot immediately, they need to be spread out and placed. Do not pile them together, as they will stick to each other.
Preparation Step 4
Place the noodles in boiling water and cook for about 2 minutes. Blanch some vegetables by the way.
Preparation Step 5
Put the noodles into a bowl. Add minced garlic, chopped green onion, chili powder, pepper powder, salt and green vegetables.
Preparation Step 6
Burn the oil until it smokes, and pour it into the noodle bowl.

Add a little vinegar, light soy sauce, and stir evenly.
Tricks
If you are too lazy to make noodles yourself, you can use the lace-like knife-shaped noodles. The taste is slightly inferior, but you can still substitute it when you are lazy.
2. A bowl of Yangchun noodles
Ingredients: 20g light soy sauce, 3g dark soy sauce, 1g sugar, 120g thin noodles, 0.2 tsp white pepper, a little sesame oil, chopped green onion. Adding flavors
Production step 1
After boiling water in the pot, add noodles, cook for about 3 minutes, and remove.
Preparation Step 2
Put sugar, white pepper, and light soy sauce into a bowl, pour in about 350ml of noodle cooking water, and add noodles.
Preparation step 3
Sprinkle chopped green onion and drizzle with sesame oil.
If lard is available, use lard, which will make it more fragrant.
