Ingredients:

Method:
1. Prepare fresh pork belly, wash it, be sure to wash it several times. Then put it into a pot, add a little cooking wine and blanch it for 5 minutes, take it out and set aside.
2. Cut green onions into sections, slice ginger, star anise, cinnamon, and bay leaves. Set aside.
3. Put the blanched pork belly into a pot and add water. After the water boils, add onions, ginger, star anise, cinnamon, bay leaves, light soy sauce, and cooking wine and simmer over low heat for 1 hour.
4. Cool the pork belly and cut into shreds. Beat the garlic into minced garlic and set aside.
5. Cut the cucumber into shreds, the green onion into shreds, and the green and red peppers into shreds. Set aside.
6. Prepare a larger container, add light soy sauce, vinegar, chicken essence, sugar and minced garlic and stir evenly.
7. Then pour in the shredded pork belly, cucumber, green onion, and green and red pepper, stir evenly, transfer to a plate and serve.

1. When cleaning the pork belly, you can soak it for an hour in advance to make it cleaner.
2. The cooked pork belly must be completely cooled before use, otherwise it will affect the overall taste.
