In addition to Mount Emei and Mount Qingcheng, Sichuan spans across Ya'an and the Mengshan Mountains in the two famous mountain counties are also famous in ancient and modern times. There are many ancient temples here, such as Tiangai Temple, Yongxing Temple, Jingju Temple, etc., green forests, red sky, and ravine flying springs. In the beautiful scenery, famous teas from ancient to modern times are nurtured.
Mengshan is 1,500 meters above sea level, with an average annual temperature of 14-15 degrees. Most of the soil is sandy loam with deep soil layers, which is a natural condition conducive to the growth of tea trees. There are five peaks on the top of Mengshan Mountain, namely Shangqing, Water chestnut, Piluo, Jingquan and Ganlu. They stand against the sky and represent the noblest temperament of Mengshan. Among them, Shangqing Peak has the highest altitude, overlooking the mountains of Emei, like a king lording over the world. During the Western Han Dynasty, Zen Master Puhui came to Mengding Mountain and planted seven tea trees among the five peaks with his own hands, becoming the ancestor of tea on the top of Mengding Mountain.
The height of these seven tea trees is about one foot. After two thousand years, they have neither withered nor grown, as if time has never passed through them, so they have won the title of "fairy tea" "Reputation.
Since the Western Han Dynasty, "the water in the heart of the Yangtze River, the tea on the top of Mount Meng" has been praised throughout the ages. During the Tang and Song Dynasties, Mengding tea was once known as the best in the world. By the Ming Dynasty, the reputation of Mengding tea gradually faded and was even completely ignored by people at that time.
The decline of Guantian Mengding tea was explained by Xu Cishu, a tea master in the Ming Dynasty, in his "Tea Book": "When discussing tea in ancient and modern times, Mengding must be the first one to talk about. Mengding Mountain is the mountain of Shuya Prefecture. It used to be produced, but it no longer exists. Even if it exists, the barbarians are not allowed to come out of the mountains. How can it reach the Central Plains and Jiangnan?" In fact, the tea in Shu gradually disappeared from the upper class tea. The stage begins with the Song Dynasty.
During the Song Dynasty, the court focused on tribute tea from the Jiangnan and Fujian areas. Tea from Shu was no longer used as tribute tea, and the reputation of Mengding tea was preserved. Thanks to the Tang Dynasty The literati of the Song Dynasty left a large number of poems praising Mengding tea, so that future generations can not only recite it, but also taste the charm of Mengding tea in their imagination.
Mengshan tea is yellow and green in color, sweet and clear in taste, high and fresh in fragrance, and has outstanding quality. Since the Tang Dynasty, Mengshan tea has been a tribute tea for the court, and only royal relatives and nobles can enjoy it. At that time, tribute tea was picked at the beginning of summer every year. When the tea buds had sprouted, the county magistrate would choose an auspicious day and wear court clothes and go up the mountain to pick it.
After the monks and staff burn incense and worship, tea picking can officially begin. For the Seven Plants of Immortal Tea, only three hundred and sixty leaves can be picked each year, corresponding to the number of days in the year. Then, the monks sit up and chant sutras, roll them into strips with their hands, dry them over charcoal fire, and store them in silver boxes that are four inches long and two inches wide and four inches high. Under the water chestnut peak, other tea trees will also be picked. The whole pekoe buds are suitable, and the monks will knead them and put them into tin bottles to accompany the tributes to Beijing.
The monks who live in Jingju Temple in Mengshan Mountain are called tea-picking monks, and they are responsible for picking tea on the top of Mengshan Mountain every year. The monks of Qianfo Temple are responsible for managing tea trees, the monks of Dafo Temple are responsible for making tea, and the monks of Tiangai Temple are responsible for evaluating the quality of tea. Each temple has its own division of labor and responsibilities. When the tea-picking season comes, monks from the 72 temples in the county go to Mengshan Tiangai Temple to burn incense and worship. This tradition was not abolished until after the Manchu Qing government was overthrown.
After the founding of New China, the Ya'an Tea Experimental Field was established at the foot of Mengshan Mountain, based on Yongxing Temple on the right side of Mengshan Mountain. It was later rebuilt into the Mengshan Tea Farm in Ya'an County, opening up 450 acres of barren hills. , established 380 acres of new tea gardens.
There are many types of Mengding tea, and different famous teas have appeared in different eras. The earliest Mengding tea mainly consisted of loose teas such as Lei Ming, Wu Zhong, Que Ton, and Pekoe, as well as formed teas such as Long Tuan and Guan Cake. In modern times, Mengding tea is famous for its yellow buds, which are divided into three grades: rice buds, yellow buds and white buds.
The Mengding tea made from the first buds and leaves is called rice buds, the buds made from one leaf are called yellow buds, and the buds made from one bud and one leaf are called rice buds. The buds are white. Mengshan tea buds and leaves are fat and strong, and the tea soup is bright yellow in color, so it is also collectively called Mengding yellow buds.
The preparation method of Mengding tea is simple. After it is cooked in the pot, continue to stir-fry until it is 70 to 80% dry. Then remove the pot and let it cool for 1-2 hours, then add it to the pot and stir-fry until it is dry. Now Ya'an Tea Factory has two new Mengding tea products, Wanchun Silver Leaf and Corn Changchun, which are very popular. They have beautiful shapes and fresh fragrance, which can be called the best Mengding tea.
