1. Ingredients: One pig ear, one green pepper, one red pepper, appropriate amount of garlic sprouts, appropriate amount of celery, and appropriate amount of ginger.
2. Wash the pig ears after buying them, boil water in a pot, and immerse the pig ears in water for a few minutes. Then drain and cool.
3. Prepare the ingredients and clean them. One each green and red pepper, ginger, garlic leaves, and small celery stalks. The amount of each ingredient is up to your own preference, but for chili peppers, it is recommended to remove the chili seeds inside to make it less flammable.
4. Cut the pig ears into thin slices and cut the ingredients.
5. Pour a small amount of oil into the pot, add the ginger slices and saute until fragrant. Don't use too much oil, because the fat in the pig's ears will produce oil when fried.
6. Pour in the pig ears and stir-fry over low heat. After the oil is squeezed out, add one or two pieces of garlic stems and stir-fry over high heat.
7. When the pig ears turn golden, add a little soy sauce and water and cook. When the juice is almost reduced, add the celery and garlic stalks and stir-fry over high heat.
8. Before cooking, add the remaining garlic leaves, add salt, stir-fry evenly and serve on a plate.
