Tools/materials: snakehead, tofu, ginger, cooking wine, vinegar, pepper, salt, onion and chicken essence.
The specific operation is as follows:
1, before making fish soup, kill and wash the fish first, take out the prepared snakehead, remove all its scales and gills, and then wash it. It is recommended to wash it several times, and then cut the fish into thick slices;
2. Take out the tofu and cut it into blocks, then scald it in boiling water and take it out.
3. Pour the oil into the pot, wait until the pot is hot, put the ginger into it, and stir fry the fish pieces;
4. Add a little cooking wine after the fish pieces change color and become golden, so as to remove the fishy smell of the fish;
5, add the right amount of water, then adjust to the fire to boil, and then add a few drops of vinegar. Reheat with medium fire 15 to about 20 minutes;
6. After the time is up, add tofu and cook for about 5 minutes with high fire;
7. Add the right amount of salt and pepper. These two things must be put slowly and tasted;
8. Add chicken essence and chopped green onion, so that the whole fish soup is ready.
