Generally, if the pork is cut too thick, you have to cook it longer. If you put the pork in the boiling water, it will take about 15 minutes to cook.
But if you want the soup to have a meaty flavor, you need to bring it to a boil, turn it down to a simmer and cook it for another hour.
If you cut it into slices, you can cook it in boiling water for 5 minutes, and the pork will be smooth, but the soup won't have much meat flavor. But 5 minutes or so will be cooked.
