Prepare ingredients: onion, ginger, white wine, white pepper, salt and crucian carp (the black film and blood clot in the fish belly must be washed clean).
Exercise:
① Put the crucian carp in a cold pot and fry it slowly with hot oil until both sides are golden, pour out the excess oil, add water, onion ginger and appropriate amount of white pepper, add 1 spoon of white wine, cook until the soup is milky white, and add appropriate amount of salt.
② Put the cooked crucian carp soup into a bowl and sprinkle with chopped green onion.
Key points: first put cold oil in the hot pot and turn it over. Heat until the oil smokes. Pour out the hot oil and pour the cold oil into the pot.
