The persimmons ripened by this method have an aromatic flavor, but the fruit body is slightly soft.
4. Heating and hypoxia to remove astringency: Place the persimmons in a cylinder, bucket, altar or aluminum pot (iron containers are not required), add 45 degrees Celsius water, and submerge the persimmons. By heating or keeping warm under a container, or adding hot water from time to time, keeping the water temperature at 35 to 40 degrees Celsius, astringency can be removed in 16 to 18 hours. The flesh of the fruit processed by this method is crisper and harder.
5. Carbon dioxide deastringency: Place persimmons in a closed container, inject carbon dioxide gas at a pressure of 0.7 to 1.05 kg/cm2, and remove astringency in 2 to 3 days at 15 to 25 degrees Celsius. astringent. The fruits treated with this method are crisp but not soft.
6. Cold water to remove astringency: Put the persimmons in a basket or other utensils, and soak the utensils in clean water. For example, use a basin or bucket to hold the persimmons. Change the clean cold water every morning. In this way, After 7 to 19 days, the astringency can be removed, also called "cold persimmon". Although this method takes a long time to remove astringency, it does not require heating or equipment, and the astringent persimmon fruit is crisper than the astringency removed with warm water.
