Prepare the ingredients for making colorful peppers: colored peppers, dark soy sauce, rock sugar, garlic, star anise, and white wine.
1. First, we rinse the colorful peppers with clean water, put them in a rack and drain the water.
2. Then stuff all the drained colorful peppers into the jar, do not stuff them too full, as shown in the picture below.
3. Add rock sugar, star anise, garlic slices, and white wine (one-third of the bottle cap is enough. If you see whitening or foaming on the surface of the bottle later, add more white wine).
4. Then add old soy sauce until it is full, as shown in the picture below.
5. After filling up the soy sauce, tighten the bottle cap and store it in a sealed container. It will usually be ready to eat in about 7 days.
