Usually, when making Wujiang fish, you need to prepare a fresh Wujiang fish, which is about 1 kg to 1.5 kg. Steps
1. Remove the scales from the prepared Wujiang fish, dig the belly, then remove all the internal organs, wash it with clean water, and finally cut the sides of the fish with a knife.
2. Cut the prepared South Bean Curd into blocks of moderate size, blanch it in boiling water for three minutes, drain the water after taking it out, then cut all the prepared garlic and green onions into rings, and cut the bean paste into fine powder.
3. Put lard in a wok. When it is heated to 6% heat, put Chili and bean paste in the wok and fry until fragrant. Then add ginger, garlic slices, spiced powder and pepper. After stir-frying, put Wujiang fish and tofu in the wok. Finally, add clear water.
4. After heating and boiling, slowly simmer for 2 minutes with medium and small fire. During the stewing process, the fish soup should be poured on the surface of the fish continuously, which will make the prepared Wujiang fish more tasty.
